Ardith's Cherry & Lemon Eagle Brand Pie

My Mom's recipe and my Dad's favorite pie. This cherry and lemon pie is very easy to make! My pie isn't pink like the photo because I don't use red food coloring. It's closer to the color of Eagle brand condensed milk.
Ingredients
- CRUST:
- 1 cube margarine, melted
- 2 packages graham crackers, crushed
- FILLING:
- 1 can Eagle Brand sweetened condensed milk
- Juice of 2 lemons or 1/4 cup lemon juice
- 2 egg yolks
- 1/2 pint of whipping cream
- 1 can pitted sour red cherries drained (not pie filling)
- 1 cup of chopped pecans (chopped fine)
- red food coloring optional

Preparation
Step 1
Mix the melted margarine and graham crackers, and press in two 9-inch pie plates; Reserve a couple of tablespoons of crumbs to sprinkle on top.
Store bought graham cracker crusts may be used, but they aren't as good!
Bake the crust for about 10 minutes at 350 degrees, until lightly toasted.
Whip the cream with sugar and vanilla (you may substitute 1 package of Dream Whip or 1 carton of Cool Whip). Fold in the remainder of the pie filling ingredients.
Pour the filling into the cooled pie crust and refrigerate.
