Ingredients

  • 10 ounces diced chicken
  • Garlic Salt and Pepper
  • Garlic powder
  • 4 to 6 slices thick bacon
  • 1 1/2 cups Rice
  • 2 cups beef broth
  • 2 medium onions diced finely if possible; chunky if lazy
  • A handful of frozen corn

Preparation

Step 1

1. Fry the bacon in a pan until slightly browned (4 to 5 minutes). If the bacon is very thick and doesn't render much fat then add a splash of olive oil to the pan.

2. Add the rice and cook over medium low until the rice is golden brown (3 to 4 minutes).

3. Add the onions and corn and cook for 2 minutes.

4. Add the chicken and 2 cups of BEEF stock (you'd think chicken but you'd be wrong!).

5. Season with garlic salt, pepper, garlic power (a generous splash of all).

6. Stir, cover and cook on low for 20 minutes or until liquid is absorbed.
