Ingredients

  • 1-1/4 cups all purpose flour
  • 3/4 cup cornmeal
  • 1-1/2 tsp baking powder
  • 1 tsp kosher salt
  • 1/2 tsp baking soda
  • 2 large eggs
  • 1 cup buttermilk
  • 1/4 cup honey
  • 4 Tbsp unsalted butter, melted

Preparation

Step 1

1. Heat oven to 375 degrees. Coat a 12-cup muffin tin with cooking spray.

2. In a medium bowl, whisk together the flour, cornmeal, baking powder, salt and baking soda.

3. In a large bowl, whisk together the eggs, buttermilk, honey and melted butter. Add the flour mixture and stir up combine.

4. Divide the batter among the muffin cups and bake until golden brown and a toothpick inserted at the center of amuffin comes out clean, about 30 to 35 minutes.
