Pickled Green or Grape Tomatoes

I used my home grown grape tomatoes for this recipe and each bite tastes like you are eating a spoonful of salsa. Also works well with sliced tomatoes toward the end of the season when they don't quite ripen!

Ingredients
- 2 pounds green tomatoes (about 4 or 5), thinly sliced or enough grape tomatoes (Green) to fill two jars.
- 1 jalapeño, stems removed, cut in half lengthwise
- 1 teaspoon cumin seeds
- 1 teaspoon peppercorns
- 1 teaspoon celery seed
- 1 teaspoon dill seed
- 2 cloves garlic, minced
- 1 sprig cilantro
- 1 sprig oregano
- 1 cup white vinegar
- 1 cup water
- 1 tablespoon sea salt
- 2 wide-mouth pint canning jars or 1 wide-mouth quart jar, sterilized
- w/ lids and rings.
Preparation
Step 1
Bring to a boil the vinegar water and salt. In the sterilized jars split the rest of the ingredients evenly. Pour boiled liquids into jars leaving 1/4 inch space at the top, fasten lids and process in a boil bath 10 to 15 minutes. Let cool and listen for that click that lets you know they are properly sealed.
