Ingredients

  • 1-1/2 lbs lean pork stew meat or pork shoulder
  • 3 Tbsp all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 Tbsp canola oil
  • 1 cup chopped onion (1 large)
  • 5 medium carrots, cut into 1/2 inch slices (2-1/2 cups)
  • 1 14.5 oz. can diced tomatoes, undrained
  • 1/4 cup packed brown sugar
  • 1/4 cup cider vinegar
  • 2 Tbsp quick cooking tapioca
  • 1 Tbsp Worcestershire sauce
  • 2 8.8 oz. pounches precooked rice, heated according to package directions

Step 1

Night before Prep:
1. Cut pork into pieces, place in a container cover and refrigerate.
2. Combine flour, salt and pepper in a resealable plastic bag, seal and store.
3. Chop onion and cut carrots. Place in a separate container, cover and refrigerate.

Preparation:
1. If necessary, trim fat and cut meat into 1-inch pieces. In a feasible plastic bag combine flour, salt and pepper. Add meat pieces, a few at a time, shaking to coat. In a large skillet cook half of a the meat in hot oil until brown. Transfer meat to 3-1/2 to 4 qt. slow cooker. Add remaining meat and the onion skillet. Cook until meat is brown and onion is tender. adding addtional if necessary. Transfer meat mixture to slow cooker. Add carrots.

2. In a medium bowl combine undrained tomatoes, brown sugar, vinegar, tapioca and Worcestershire sauce. Pour over meat mixture in slow cooker.

3. Cover and cook on low-heat setting for 7-9 hours or on high heat setting for 3-1/2 to 4-1/2 hours. Serve over rice.
