Carrot Cake

Ingredients

  • Cake:
  • 1 1/2 cup flour
  • 1 tsp baking soda
  • 2 cups grated carrots
  • 1 cup crushed pineapple with juice
  • 3/4 cup vegetable oil
  • 1 1/2 cup sugar
  • 3 large eggs
  • 1 tsp each cinnamon and nutmeg
  • 1/2 cup chopped pecans
  • Icing:
  • 8 oz cream cheese, softened
  • 3 TB butter, softened
  • 1 1/2 cups confectioners sugar
  • 1 1/2 tsp orange zest
  • 1 TB orange juice

Preparation

Step 1

Preheat oven to 375. Grease and flour a 13x9 pan.

Combine flour and baking soda. Set aside. In a separate bowl, combine the rest of the ingredients except nuts. Mix well. Add flour mixture and beat together on medium for two minutes. Fold in nuts. Pour into prepared pan. Bake 30 minutes. Cool 10 minutes in pan.

To make icing:
Combine all ingredients and beat until smooth.
