Green Bean Casserole with crispy bacon

Ingredients
- 3 Tbsp olive oil
- Salt and ground black pepper
- 2 lb green beans, trimmed and halved
- 6 oz bacon
- 1 cup fresh bread crumbs
- 1/4 cup plus 2 Tbsp grated mozzarella cheese
- 1 onion, finely chopped
- 1 garlic clove, finely chopped
- 3/4 cup 1% milk
- 4 oz lowfat cream cheese
- Pinch freshly grated nutmeg
- Pinch cayenne pepper
- 2 tsp fresh lemon zest
- 1 spinach bunch, thick stems discarded, leaves roughly chopped

Step 1
1. Heat oven to 375 F. Oil a 2 qt baking dish. Bring a large pot of salted water to a boil. Add beans and cook until just tender, 3 to 4 mins. Drain and run under cold water to cool.
2. Meanwhile, heat 1 Tbsp oil in a large skillet over medium heat. Add bacon and cook, until browned about 5 mins. Transfer to a bowl and toss with the bread crumbs and 2 Tbsp mozzarella cheese.
3. Wipe out the skillet and heat the remaining 2 Tbsp oil over medium heat. Add the onion, season with ½ tsp salt and ¼ tsp pepper and cook, covered, stirring occasionally, until very tender, 6 to 8 mins. Stir in the garlic and cook for 1 min.
4. Whisk in the milk and bring to a simmer. Whisk in the cream cheese, nutmeg, cayenne and remaining ¼ cup mozzarella cheese and simmer, stirring occasionally, until slightly thickened, 2 to 3 mins.; stir in lemon zest and toss with the green beans.
5. Fold in the spinach and transfer to the prepared baking dish. Sprinkle with the bacon mixture and bake until golden brown, 15 to 20 mins.
