Orange Marmalade ( Mandarin Oranges too)

Ingredients

  • 4 Navel Oranges ( or 8 Mandarin Oranges) or combo of both.
  • 1 Lemon
  • Sugar

Preparation

Step 1

Wash all fruit very well.

Quarter Oranges & Lemon, peel off the rinds and set the pulp aside.
I have an electric citrus juicer. So - I cut fruit in half and juice
them. Set the juice aside, take the rinds and pull off the pulp from
the inside of the rinds. Put the pulp aside.

Chop the rinds in very small slices. Put the chopped rind in water to cover, so they float freely. Bring to a boil - turn to simmer for 20 minutes.

Chop the pulp into very small 1/4 " pieces and pick out any seeds that may have gotten in. Capture any juice from the chopping.

Combine the juice-pulp-boiled rind and weigh it. I measure it in a cup. Measure out the same amount of water and sugar. Three equal parts. Combine all in a heavy safe pot. Bring to a boil and simmer - stirring gently. cook until thick about 30 minutes. Mixture will be about one half the original amount.

Hot marmalade can be put into jars and into a boiling water bath for 5 minutes. Or just refrigerate and use it.
