Almond Paste

Homemade almond paste is easier to work with than the stiff store bought. I use this in a lot of recipes so it's worth the small effort required.

Ingredients
- 1 pound blanched almonds
- 1 pound confectioner's sugar
- 3 egg whites
- 1 teaspoon almond extract

Preparation
Step 1
Grind the almonds in a blender or food processor to fine texture (not butter. Thoroughly mix in the sugar.
Beat the egg whites slightly, then stir into the almond/sugar mixture. Add almond extract. This will be stiff, you may need to mix with your hands.
Measure out into 8 ounce portions. (should yield 4 8 ounce portions). Refrigerate until needed.
