Ingredients
- 1 pound ground turkey
- 1 small onion, chopped
- 2 large cloves garlic, minced
- 6 cups low sodium chicken broth
- 1 (10-ounce) can diced tomatoes with green chilies
- 1 (4-ounce) can stewed tomatoes
- 1 (14-ounce) can tomato sauce
- 2 cups shredded carrots
- 1/2 cup chopped celery
- Sea salt and freshly ground black pepper to taste
- 1 small head cabbage, shredded
- 2 cups chopped zucchini
- 1 teaspoon dried parsley
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 tablespoon chili powder
Preparation
Step 1
In a large pot over high heat, add all the ingredients (turkey through chili powder) and stir well. Bring soup to a boil then cover and reduce heat to low. Simmer for 30 minutes, until turkey is cooked through and vegetables are tender.
