Hummus: Cilantro Jalapeno Hummus

Ingredients

  • 1 clove garlic
  • 1 (15 ounce) can garbanzo beans, drained and rinsed (try not draining)
  • (Try adding up to 1/2 cup tahini)
  • 1 1/2 tablespoons lime juice
  • 3/4 teaspoon salt
  • 1/8 tsp pepper
  • 1/4 cup olive oil
  • 1/4 cup + 1/8 cup chopped fresh cilantro
  • 1 jalapeno, seeded and minced

Preparation

Step 1

(Try microwaving garlic and beans for 5 mins first, then processing in food processor until smooth.Then add the rest of the ingredients plus tahini if using.)

Place garlic in a food processor and process until minced, about 10 seconds. Add beans, lime juice, salt and pepper. Process into a puree. With the processor running, slowly add olive oil in a steady stream through the feed tube. Process until mixture thickens, about 1-2 minutes. Add cilantro and jalapeno and pulse throughout, about 10 seconds. Store in an airtight container in the refrigerator. Bring to room temperature before serving.
