Ingredients
- 2 tbsp butter
- 1/4 cup finely chopped shallots or onions
- 3 tbs amore tomato paste
- pinch of crushed red pepper
- 1 cup heavy cream
- 1/4 cup vodka
- 1 pound penne or other short pasta tubes
- salt
- 1/2 cup freshly grated parmigiano reggiano cheese

Preparation
Step 1
Melt Butter over medium heat in a skillet large enough to hold all of the pasta
Add the shallots and cook until golden, about 2 minutes. Add Amore Tomato Paste and crushed red pepper. Cook, stirring 1 minute or until blended. Add heavy cream and vodka and cook for 1 additional minute
Meanwhile, boile pasta according to package directions. Drain and toss with sauce. Add cheese and toss well
