scalloped potatoes

this is a great recipe for yummy potatoes, however they are not light! you can try a lighter version by using less cheese and 1/2 & 1/2 instead of heavy cream--but if they are for a special occasion then go for the loaded version!! enjoy....

Ingredients

  • 1

    bag red potatoes, sliced thin

  • 2-3

    vidalia onions, sliced thin

  • 2

    cups shredded Swiss cheese

  • 2

    cups shredded monterey jack cheese

  • 1

    pint heavy cream

Directions

Layer potatoes (sprinkle each layer with coarse kosher salt and pepper), then onions and each cheese. Make 2-3 layers then pour heavy cream over top. Bake 45 minutes to 1 hour until potatoes are soft to a fork and the top is brown and bubbly.
