Banana Pancakes

Ingredients
- 4 Tbsp unsalted butter, plus more for cooking pancakes
- 2 cups all purpose flour
- 2 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 2 Tbsp sugar
- 2 eggs
- 2 cups buttermilk
- vegetable oil (preferably canola)
- 3-4 medium bananas, cut in 1/4" slices

Step 1
1. Melt butter in a skillet over low heat (you can use the same pan in which you'll make the pancakes.
2. Mix flour, baking powder, baking soda, salt and sugar in a large bowl. Make a well in center of mixture and add eggs and buttermilk. Stir until the big lumps are gone. Add melted butter and stir until just barely combined. (Do not overmix! The batter should still have small lumps) Let sit for 5 min.
3. Warm skillet over med. heat for 1 min. Add 1 1/2 tsp butter and 1 1/2 tsp oil and heat to sizzling (about 1 min more).
4. Pour 1/3 cup batter per pancake into skillet. Sprinkle 4-5 banana slices over batter. Cook until bubbles appear on the pancake tops and the undersides are golden brown (about 3 min). Flip pancakes with a spatula and cook until golden brown on the second side (2 min more). If needed, add another tsp each of butter and oil in pan and continue with rest of batter.
5. Serve pancakes with remaining banana slices and syrup.
