Turkey Enchiladas Grande
- 2 T. canola oil
- 1 # ground turkey breast
- 1 can refried beans
- 2 (8oz) cans no salt added tomato sauce
- 3/4 cup water
- 1 pkg. enchilada mix
- 8 (7-8”) corn tortillas
- 1 1/2 cups reduced fat shredded cheddar cheese, divided
- Sour cream
- Sliced green onions for garnish
1.Heat oven to 350.° In large non stick skillet heat oil on med.
Add turkey & cook about 5 min. Stir in beans, tomato sauce, water,
& enchilada mix..Simmer uncovered 15 min. stirring occasionally.
2.Coat 9x13 pan with Pam. Arrange ½ the tortillas on bottom of pan,
trimming & overlapping to cover bottom of pan.
Spoon ½ of turkey mixture over tortillas in pan.
Sprinkle with remaining cheese.
Bake uncovered 10 min. Let stand 10 min.
Top with sour cream & green onions.
