BLUE CHEESE VINAIGRETTE SALAD SAUCE

Ingredients

  • Makes: 1 1/4 cups
  • 7 Tbsp olive oil
  • 2 tsp minced garlic
  • 3/4 cup crumbled blue cheese (about 2 1/2 oz)
  • 1/4 cp white vwine vinegar
  • 1 Tbsp wter
  • 1 Tbsp sugar
  • 1/2 tsp hot pepper sauce (such as tabasco)
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 Tbsp chopped fresh basil

Preparation

Step 1

1. Heat 1 Tbsp oil in heavy small skillet over medium heat. Add 2 tsp minced garlic and saute until golden, about 1 minute. Transfer garlic mixture to blender. Add blue cheese, white wine vinegar, 1 Tbsp water, sugar, hot pepper sauce, salt, pepper and remaining 6 Tbsp olive oil; blend well. Transfer vinaigrette to bowl. Mix in chopped basil.

2.(Vinaigrette can be prepared 2 days ahead. Cover and refrigerate).
