Ingredients
- Spicy Rice:
- 1 lb. large shrimp, peeled and deveined
- 1/3 c. prepared barbecue sauce
- 1 Tb. vegetable oil
- 1/2 c. sliced green onion
- 1/2 c. finely diced carrots
- 1/2 c. finely diced red bell pepper
- 1 jalapeno pepper, minced
- 2 c. cooked rice
- 2 Tb. finely chopped cilantro
- 1 Tb. fresh lime juice
- 1 tsp. soy sauce
- hot pepper sauce
Preparation
Step 1
Preheat broiler or prepare outdoor grill for cooking. On each of 4 metal or wooden skewers, thread shrimp. If broiing, coat broiler rack with cooking spray. Place shrimp on broiler rack or grill (about 5" from heat source.) Brush with barbecue sauce and cook 4 minutes. Turn skewers over and brush with remaining barbecue sauce. Broil 2-4 minutes longer, until shrimp are pink and cooked through. Serve with Spicy Rice.
For Spicy Rice: In a large skillet over medium high heat, heat oil. Add onions, carrots, red pepper and jalapeno; cook 3-5 minutes, or until tender-crisp, stirring often. Stir in rice, cilantro, lime juice, soy sauce, and hot pepper sauce to taste; cook until thoroughly heated.
Microwave Instructions: In 2-qt. microwave-safe baking dish, combine onions, carrots, red pepper, jalapeno and oil. Microwave on HIGH 2-3 minutes, or until vegetables are tender-crisp. Add rice, cilantro, lime juice, soy sauce and hot pepper sauce to taste. Microwave on high 3-4 minutes, or until thoroughly heated, stirring after 2 minutes.
