Skillet Gnocchi With Spinach And White Beans

  • (1 T plus 1 t olive oil, 1 T minced garlic, 1/2 c water)
  • 16 oz pkg dried gnocchi
  • 1 c chopped onion
  • 6 c chopped fresh spinach
  • 15 oz can diced tomatoes with Italian seasonings
  • 15 oz can great Northern beans, drain and rinse
  • (1/4 t pepper)
  • 1 c shredded 2% mozzarella cheese



Step 1

Heat 1 T oil in a large nonstick skillet over med heat. Add
gnocchi, and cook until plump and beginning to brown, 5 -
7 min. Transfer to a bowl. Add remaining 1 t oil and onion
to pan; cook 2 min. Add garlic and water; cook 4 min. Add
spinach, and cook until starts to wilt (2 min). Stir in
tomatoes, beans and pepper; bring to a simmer. Stir in
gnocchi, and sprinkle with cheese. Cover, and cook until
cheese is melted and sauce is bubbling.
