Baxter Family Enchilada Casserole

A family dinner favorite of the fictional Baxter Family. This is half the original recipe.

Ingredients

  • 4 large chicken breasts
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 can cream of chicken soup
  • 8 ounces red enchilada sauce (mild)
  • 4 ounces diced mild chiles
  • 1 bag tortilla chips
  • 2 cups grated cheddar cheese
  • sour cream
  • salsa

Preparation

Step 1

Boil chicken, cool and cut into cubes. Set aside.

In a large mixing bowl, combine soups, enchilada sauce and chiles. Add cubed chicken to the soup mixture, stir to mix completely.

Gently crush tortilla chips and set aside.

Layer 2-3 times into a 9 x 13 baking dish the following: the soup/chicken mixture, crushed tortilla chips (just enough to cover, but not too thick), then grated cheese (to taste; shouldn't be a solid layer). NOTE, the cheese should make up the final layer.

Bake in 375 degree oven for 45 minutes, or until edges are bubbly and cheese is melted over chips layer.

Serve with sour cream and salsa and remainder of chips and cheese.
