Jumbalaya

Ingredients

  • 2 Tablespoons butter
  • 1/2 pound diced chicken
  • 1/2 pound diced ham
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon black pepper
  • 1 28 ounce can diced tomatoes
  • 1 cup chopped green pepper
  • 1 cup diced onion
  • 1 cup chopped celery
  • 1 tablespoon minced garlic
  • 2 1/2 cups chicken stock
  • 2 cups uncooked long grain rice

Preparation

Step 1

Blend spiced and set aside. Melt butter in an ovenproof skillet or Dutch oven and brown the meats. Add spices and stir. Add vegetables and cook until translucent. Stir in chicken broth and rice. Cover and bake at 350 for 35 minutes.

This is equally delicious substituting farro or brown rice for the white rice. Brown rice will need an additional 15 minutes of cooking time in the oven.
