AUNT DEB'S CREAMY MUSHROOM SOUP
- 8 ounces fresh mushrooms cleaned and sliced
- 1/4 cup butter or margarine
- 2 tablespoons chopped onion
- 3 cups low sodium chicken broth
- 1/2 cup flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 cups whole milk
- 2 tablespoons sherry
Put mushrooms in crockpot.
Melt butter in saucepan. Mix in onion and cook until tender. Mix in flour, salt and pepper. Add chicken broth gradually stirring constantly. Bring to boil while stirring. Pour into pot with mushrooms
Cover and cook on high 2 1/2 - 3 hours. Add milk and stir.
Cover and cook on low for 1 hour. (Cooking on high will curdle the milk)
Before serving add sherry.
