Banana Split Icebox Cake

Ingredients

  • 800 g fresh strawberries, sliced
  • 2 large bananas, sliced
  • 500 ml fresh cream, chilled
  • 1/2 cup confectioners’ sugar
  • 1 tsp vanilla
  • 1 1/2 pack 250 g malt crackers
  • hard set chocolate topping

Preparation

Instructions
In a bowl whip fresh cream until it just holds stiff peaks, add the confectioners’ sugar and vanilla then continue to whip until mixed.
Get a 9 in spring form pan then arrange the first layer of malt crackers. Top with whipped cream mixture then a mix of strawberries and bananas. Continue to do this until you have 3 layers
Drizzle hard set chocolate topping on top then place in the refrigerator for 3 hours, then afterwards place in the freezer for 1 more hour prior to serving.
