Ingredients
- 2 Tb. grated lemon rind, about 3 lemons
- 1 Tb. olive oil
- 1 1/4 tsp. black peppercorns, crushed
- 1/2 tsp. salt
- 2 garlic cloves, minced
- 4 (6 oz.) flounder fillets
- lemon wedges
Preparation
Step 1
1. Preheat oven to 425 degrees.
2. Combine the first 5 ingredients. Place fillets on a jelly-roll coated with cooking spray. Rub the garlic mixture over fillets. Bake at 425 degrees for 8 minutes or until fish flakes easily with a fork. Serve with lemon wedges.
