Veggie Nut Loaf
- 1 cup grated carrots
- 1 cup chopped celery
- 3/4 cup nuts(sunflower seeds, pecans)
- 1/2 chopped bell pepper
- 1/2 lb cleaned mushrooms
- 1/2 cup finely chopped onions
- 1/4 cup butter
- 1/4 cup unsifted wheat flour
- 1/4 tsp pepper
- 1 1/2 cup grated cheddar cheese
- 3/4 cup wheat germ
- 3 eggs slightly beaten eggs
Grease loaf pan
Simmer all veg together in butter.
Stir in flour, pepper, and milk.
Cook over low heat until melted.
Remove from heat, stir in wheat germ, nuts and eggs.
Mix well pour into pan.
Bake at 350 for 40-45 minutes
