Ingredients

  • For the filling:
  • 1 lb. rice
  • 1 1/2 - 2 oz. butter
  • 2 pt. stock (Knorr bouillon cubes)
  • 2 eggs
  • 3 tbs. grated cheese
  • shredded mozzarella cheese
  • 1 egg white
  • 1 c. breadcrumbs
  • 1 lb. ground beef
  • 1 pkg frozen peas
  • 1/2 jar marinara sauce
  • 1/2 onion chopped
  • salt and pepper
  • olive oil

Preparation

Step 1

Saute ground beef with olive oil and finely chopped onion. Season with salt and pepper and put aside.

Cook peas according to the directions. Cool and put aside.

Make a marinara sauce and put aside.

Bring water to a boil, add stock and salt.

Cook rice, al dente, drain and cool.

To rice add: cheese, butter, and eggs.

Add 3 -4 tbsp. of sauce to color rice.

You may also add finely chopped garlic and parsley for flavor.

Put a generous amount of rice in the palm of your hand - make a hole in the center - fill with 1 tsp. of peas, ground beef, mozzarella, and sauce.

Close the croquette with more rice and pat into a ball.

Dip the crouquette into *egg white and **breadcrumbs.

Deep fry until golden brown. (Make sure oil is hot)
