Ingredients

  • 1

    lb. rice

  • 1 1/2 - 2

    oz. butter

  • 2

    pt. stock (Knorr bouillon cubes)

  • 2

    eggs

  • 3

    tbs. grated cheese

  • shredded mozzarella cheese

  • 1

    egg white

  • 1

    c. breadcrumbs

  • For the filling:

  • 1

    lb. ground beef

  • 1

    pkg frozen peas

  • 1/2

    jar marinara sauce

  • 1/2

    onion chopped

  • salt and pepper

  • olive oil

Directions

Saute ground beef with olive oil and finely chopped onion. Season with salt and pepper and put aside. Cook peas according to the directions. Cool and put aside. Make a marinara sauce and put aside. Bring water to a boil, add stock and salt. Cook rice, al dente, drain and cool. To rice add: cheese, butter, and eggs. Add 3 -4 tbsp. of sauce to color rice. You may also add finely chopped garlic and parsley for flavor. Put a generous amount of rice in the palm of your hand - make a hole in the center - fill with 1 tsp. of peas, ground beef, mozzarella, and sauce. Close the croquette with more rice and pat into a ball. Dip the crouquette into *egg white and **breadcrumbs. Deep fry until golden brown. (Make sure oil is hot) * in a small dish beat an egg white ** in a dish place 1 cup of breadcrumbs
