Tillamook Vintage White Cheese Fondue

Ingredients

  • 1 loaf dark bread cut into 1" cubes (whole wheat, pumpernickel, rye,etc)
  • 1 cup sweet Champagne
  • 4 cups heavy cream
  • 3 cups shredded Sharp white cheddar
  • 1/2 tablespoon cornstarch
  • 1/2 tablespoon white pepper

Preparation

Step 1

preheat oven to 180 degrees. Arrange bread in single layer on sheet pan and place in oven 3-5 minutes to dry out slightly. Remove and set aside.
In a large saucepan, simmer champagne until reduced to 1/2 cup. Add cream and return to simmer. Toss grated cheese and cornstarch together and fold in to champagne cream mixture. Add white pepper.
Serve in fondue pot with bread cubes, cubed apples, sausage slices, or roasted potatoes
