Simple, Perfect Fresh-Ground Brisket Burgers

Ingredients

  • 1 (1lb) flat cut beef brisket, trimmed and cut into 1 inch pieces
  • 2 tblsp olive oil
  • 1/4 teas kosher salt
  • 1/8 teas freshly ground black pepper
  • Cooking spray
  • 4 (1/2oz) cheddar cheese slices
  • 8 teas canola mayonnaise
  • 4 hamburger buns
  • 4 green leaf lettuce leaves
  • 4 (1/8inch) thick tomato slices

Preparation

Step 1

1. To prepare meat grinder, place the freed shaft, blade, and 1/4 inch die plate in freezer for 30 mintues or until well chilled. Assemble grinder just before grinding the meat.

2. Arrange meat pieces in a single layer on jelly roll pan, leaving space between each piece. freeze meat for 15 minutes or unitl meat is firm but not frozen. Combine meat and olive oil in a alrge bowl, tossing to coat. Pass meat through meat grinder completely. Imeediately pass meat through grinder a second time. Divide mixture into 4 equal portions, gently shaping each into 1/2 inch thick patty. Press a nickel-sized indentation in the center of each patty. Cover and chill the patties until ready to grill.

3. Prepare grill to medium high heat.

4. Sprinkle chilled patties with salt and pepper. Place patties on a grill rack coated with cooking spray; grill2 mintues or until grill marks appear. Carefully turn patties; grill 3 minutes. Top each patty with 1 cheese slice; grill 1 mintue or until cheese melts and beef reaches desired degree of doneness. Remove patties from grill; let patties rest for 5 minutes. Spread 2 teas mayonnaise on bottom half of each bun. Palce 1 patty on bottom half of each bun; top each sandwich with 1 lettuce leaf, 1 tomtao slice, and the top half of bun.
