Cilantro Lime Shrimp

    lb. cooked shrimp

  • 2

    garlic cloves minced finely

  • 2

    T finely minced shallots

  • 2

    T olive oil

  • juice of 1 large lemon

  • ¼

    cup finely chopped cilantro (use more or less to preference)

  • 3

    T finely chopped lemongrass

  • salt to taste

  • ground black pepper to taste

  • crushed red pepper flakes to taste


Combine finely chopped shallots, garlic, cilantro, and lemongrass with cooked shrimp, olive oil, lemon juice, few dashes of salt, a few dashes of pepper and hot pepper flakes (I use a few shakes; you should season to preference) in large bowl. Refrigerate for several hours to allow flavors to blend.
