Italian Tomato Sauce

Ingredients
- 2 T olive oil
- 1/4 c minced onion
- 1 clove minced garlic
- 1/4 c minced celery
- 3 1/2 c peeled fresh tomatoes or 1 28 oz can Italian plum tomatoes
- 2 cans tomato paste
- 1 1/2 t salt
- 1 t sugar
- 1/8 t nutmeg
- 1 t oregano
- 1/8 t pepper
- 1/4 c parsley
- 1/4 c parmesan cheese

Preparation
Step 1
Heat the oil in a large saute pan and saute the onion, garlic, and celery for 5 minutes. Crush tomatoes and place into large saucepan with onion-garlic mixture. Add remaining ingredients except cheese and bring to boil. Reduce heat and add the cheese. Stir well to blend. Simmer covered 1 hour stirring frequently so sauce does not scorch. Water may be added if sauce is too thick.
