Preparation

Step 1

Add the olive oil to a dutch oven or stock pot on medium-low heat. Add the onions and garlic and saute until tender, about 3 minutes. Do not let them brown.

Increase the heat to medium or medium-high and add the ground beef and 2-3 of the sausages, casing removed. Saute to brown the meat. When the meat is browned, add the tomato paste to the pan and mix with the meat mixture. Continue cooking, stirring occasionaly, to carmelize the tomato paste, 3-4 minutes. Add the mushrooms and continue cooking for 2 minutes.

Put the whole tomatoes in a bowl and crush with your hands (you can also use diced tomatoes - I just don't think the texture is as good as crushing them with your hands.) Add the tomatoes, broth, remaining sausages, italian seasoning, and fish sauce to the pot and simmer for about an hour (you can add anchovies if you prefer.) Add more broth as needed.

When the sauce is ready, remove the whole sausages, slice, and return to sauce.

Serve sauce over cooked spaghetti.
