- 2 Tbsp. olive oil
- 2 cups uncooked basmati rice
- 2 cups chicken broth
- 14-oz. can coconut milk
- 1 tsp. salt
- 1/2 cup chopped green onions

Step 1
Heat olive oil in a large saucepan over medium-high heat. Add rice, saute 1 minute. Stir in chicken broth, coconut milk, and salt; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Stir in chopped green onions before serving.
