Ingredients
- Spicy Peanut Sauce
- – Kerry Ann
- (4-6 persons)
- 2 Tbsp veg oil (prefer peanut oil)
- 2 cups chopped onion
- 1 bay leaf
- 1 tsp. cayenne (or to taste)
- 1 tsp ground coriander seeds
- 2-3 c. veg. Stock, coconut milk or water
- 2 Tbsp fresh lemon juice or white vinegar
- 2 c. peanut butter
- Salt to taste
- 1-2 Tbsp honey or brown sugar
Preparation
Step 1
Brown onions with bay leaf.
Add spices. Saute.
Add stock or coc. Milk (etc.) Simmer 5 min.
Add peanut butter and salt.
Simmer 15 min.
Can be served hot or cold
Use: Rice paper (used as wrapper like soft taco)
Grated carrot, avocado, green onions,
Sliced cooked chicken breast
Lettuce
Fresh basil and coriander leaves
Makes a nice meal for hot night and expandable for more people
