spicey Peanut Sauce ( Kerry Ann)

Ingredients

  • Spicy Peanut Sauce
  • – Kerry Ann
  • (4-6 persons)
  • 2 Tbsp veg oil (prefer peanut oil)
  • 2 cups chopped onion
  • 1 bay leaf
  • 1 tsp. cayenne (or to taste)
  • 1 tsp ground coriander seeds
  • 2-3 c. veg. Stock, coconut milk or water
  • 2 Tbsp fresh lemon juice or white vinegar
  • 2 c. peanut butter
  • Salt to taste
  • 1-2 Tbsp honey or brown sugar

Preparation

Step 1

Brown onions with bay leaf.
Add spices. Saute.
Add stock or coc. Milk (etc.) Simmer 5 min.
Add peanut butter and salt.
Simmer 15 min.
Can be served hot or cold

Use: Rice paper (used as wrapper like soft taco)
Grated carrot, avocado, green onions,
Sliced cooked chicken breast
Lettuce
Fresh basil and coriander leaves
Makes a nice meal for hot night and expandable for more people
