  • 1/2 CUP COLD BUTTER
  • 1/2 CUP MILK
  • 1 EGG
  • 1 EGG WHITE
  • 1 TSP VANILLA
  • 1 TBSP WHITE SUGAR
  • 1 PINT STRAWBERRIES
  • 1 CUP WHIPPING CREAM, WHIPPED & SWEETENED TO TASTE

Step 1

IN BOWL COMBINE THE FLOUR,BAKING POWDER,SALT,1/2 CUP SUGAR, AND COCOA.USING A WHISK COMBINE THOROUGHLY.
CUT IN THE BUTTER UNTIL MIXTURE RESEMBLES COARSE MEAL.
IN A SMALL BOWL, BLEND THE MILK WITH THE EGG AND EGG WHITE AND THE VANILLA. STIR IN THE FLOUR MIXTURE.MAKE A SOFT DOUGH.DO NOT KNEAD.
PAT OUT ONTO A GREASED COOKIE PAN IN A 1" THICK SQUARE.THE DOUGH WILL BE A LITTLE STICKY.SPRINKLE WITH 1 TBSP SUGAR.
BAKE AT 425 FOR 10-25MIN UNTIL A BISCUIT-LIKE CRUST FORMS.COOL SLIGHTLY ON RACK
SLICE STRAWBERRIES AND SWEETEN TO TASTE.A NICE SYRUP FORMS AND THE BERRIES HAVE MORE FLAVOUR.
SLICE SHORTCAKE IN SQUARES.SPLIT OR LEAVE WHOLE.SPOON STRAWBERRIES AND SYRUP AND WHIPPED CREAM.SERVE WARM
(IF SPLITTING MIX STRAWBERRIES INTO WHIPPED CREAM RESERVING SOME WHIPPED TOPPING, PUT THAT MIX IN MIDDLE AND TOP WITH PLAIN WHIPPED CREAM AND ONE STRAWBERRY PER SLICE!)
