Beef & Homemade Noodles

Ingredients

  • 3 egg yolks
  • 1 egg
  • 3 Tbs cold water
  • 1 tsp salt
  • 1 Tbs vinegar
  • 2 cups flour
  • 2 pounds chuck roast
  • salt & pepper for seasoning

Preparation

Step 1

1 Beat eggs together; add cold water, salt and vinegar to mixture. Add flour and mix well.
2 Divide dough into halves to roll. Roll paper thin. Dry 4-5 hours on floured wax paper. Flour when cutting. Each sheet is cut into 6ths, then cut into 1/4" strips. Cut flour onto strips and let dry 1/2 hour before adding beef and broth.
3 Cut beef into 1" square chunks. Slow boil beef with salt and pepper in water for 4-5 hours. Keep roast covered, checking to insure beef is covered by 2" of water - adding as necessary.
4 Add cut, dried noodles to broth and cook 20-25 minutes.
