Seafood Chowder

Ingredients
- 1 Tbsp butter
- 2 stalks celery chopped
- 1 onion chopped
- 1 bay leaf
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 large potatoes diced
- 2 cups fish stock or chicken stock
- 1/3 cup flour
- 3 cups milk
- 2 cups fish fillets cubed, shrimp, prawns, scallops
- 2 Tbsp fresh squeezed lemon juice

Preparation
Step 1
Melt butter and sautee onions and celery. Add bay leaf, thyme, salt and pepper. Sautee for about 5 minutes
Stir in potatoes and sautee an additional 2 minutes
Increase heat to med-high and stir in fish or chicken stock
Bring to a boil
Cover and reduce heat to medium and boil for about 5 minutes or until the potatoes are tender
Whish flour into milk and stir into soup
Bring to a simmer, stirring often
Stir in seafood
Stir often for another 5 minutes or until fish is cooked
Discard bay leaf and stir in lemon juice and season with salt and pepper
