Ingredients
- 1/4 cup olive oil
- 2 enveloped (1oz ea) dry ranch dressing mix, divided
- 6 large potatoes, peeled
- 6 medium sized carrots, peeled
- 1 cup sour cream
- 2 pounds ground beef
- 1 pound ground pork
- 1/2 cup plain dry bread crumbs
- 1 egg
- 1/4 cup ketchup

Step 1
Preheat oven to 375
In a large roasting pan, combine the oil and half a package of ranch dressing. Add the potatoes and carrots and toss untill thoroughly coated; set aside.
In a large bowl, combine the sour cream and the remaining 1 1/2 enveloped ranch dressing. Then add the beef, pork, bread crumbs, and egg; mix well.
Push the vegetables to the side of the roasting pan and form the mean mixture into an oval loaf in the center of the vegetables. Spread with ketchup evenly over the meat loaf and over tightly with aluminum foil. Bake for 1 hour, then uncover and bake for 20-30 more minutes, or until the juices run clear & the potatoes are tender.
