Chicken and Snow Peas

Ingredients

  • 1 pound boneless, skinless chicken breast,
  • cut into 1/4" thick slices
  • 1/3 cup soy sauce
  • 2 teaspoons cornstarch
  • 3 tablespoons grated fresh ginger
  • 6 cloves garlic, minced
  • 1-1/2 tablespoons sesame oil
  • 1/4 cup rice vinegar
  • 1 small fresh jalapeno chili pepper, seeded and finely diced
  • 2 tablespoons olive oil
  • 3/4 pound snow peas, ends trimmed
  • 1/2 cup chicken stock

Step 1

Place each slice of chicken between 2 pieces of wax paper and pound to
1/8" thickness. Cut into strips about 1" wide.

In a bowl, combine the soy sauce, cornstarch, ginger, garlic, sesame
oil, vinegar and jalapeno. Mix well. Add the chicken and toss to coat.
Cover and marinate for 2 hours. In a wok over medium high heat, warm 1
tablespoon of the oil. Add the snow peas and toss constantly until
crisp, about 1-2 minutes. Transfer to a warmed bowl and set aside.

Remove the chicken from the marinade and reserve the marinade. Add the
remaining oil to the wok, and heat until very hot. Add the chicken and
stir constantly until golden, about 2 minutes. Add the chicken to the
bowl with the snow peas.

Reduce the heat to medium and add the reserved marinade and the chicken
stock. Cook, stirring, until the liquid thickens slightly, about 1
minute. Return the chicken and snow peas to the pan and toss and stir
until warmed through. Serve immediately.
