Ingredients

  • Salad:
  • 2 cupts cooked quinoa (cooled)
  • 1 red bell pepper, diced
  • 1 cup cooked corn
  • 1 cup black beans
  • 1 pint grape tomatoes, halved
  • 3 fresh scallions
  • 1/4 cup fresh cilantro
  • 1 avocado
  • zest from 1 lime
  • Dressing:
  • 1/4 cup olive oil
  • 1 lime, juiced
  • 2 garlic cloves, minced
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp salt

Preparation

Step 1

1. Add all the dressing ingredients together. Whisk. Set aside.

2. Add cooked and cooled quinoa to a large serving bowl. Add everything to the bowl except the avocado. Toss to combine.

3. Give dressing a good whisk and pour over the salad. Top with avocado and lime zest. Add another handful of scallions and cilantro.
