cup cheddar cheese, grated
teaspoon cayenne pepper, (more or less to taste)
Cut cauliflower into florets & cook in boiling water or microwave until tender. Drain. Mash the cauliflower while still warm. Stir in cheese, eggs, panko, cayenne & salt to taste. Form mixture into patties. Over medium-high heat, cook the patties in olive oil until golden brown & set, about 3 minutes per side.
