Ingredients

  • 2 T Olive Oil
  • 12 Corn Tortillas
  • 1 lb chicken breasts
  • 2 cans condensed cream of chicken soup
  • 8 oz Sour Cream
  • 4 cups (16 oz)cheddar or Monterey Jack Cheese
  • 1/2 C Chopped Green Onions

Preparation

Step 1

In a 12" skillet heat oil and cook tortillas. Drain on paper towles. In bowl, combine chicken, soup and sour cream and mix well. In a 2qt baking dish layer tortillas, 3 1/2 cups cheese and chicken mixture, ending with layer of tortillas. Sprinkle remaining 1/2 c cheese. Bake 30 minutes at 350 degrees. Sprinkle with green onions.
