Spinich Salad

Ingredients

  • Dressing:
  • 1 1/2 lbs fresh spinach, washed and dried well
  • 6 green oinions, including tops, sliced
  • 5 hard cooked eggs, coarsely cut
  • 8 slices bacon, cookedcrisp and crumbled
  • 1 clove garlic
  • 1/2 cup oil
  • 1 t salt
  • dash pepper
  • 3 T lemon juice
  • 1/4 cup cider vinegar

Preparation

Step 1

Remove spinach stems and break into bite-sized pieces. Toss with the onions, eggs, bacon. Cover and refrigerate for about 2 hours.
Toss with the dressing -
Marinate garlic, quartered, in oil for an hour or two. Discard garlic. Combine oil with salt & pepper in a small bowl. Combine lemon juice with cider vinegar. Gradually blend into oil beating well with rotary beater. Dressing will thicken somewhat.
