Crab Stuffed Tomatoes

Ingredients

  • 6 Large tomatoes
  • 1 green bell pepper
  • 1/2 red bell pepper
  • 1 Vidalia onion
  • 1/2 T Old Bay
  • 1/2 Tsp sea salt
  • Panko bread crumbs
  • 1 lb blue crab meat
  • Parmesan cheese
  • Extra virgin olive oil

Preparation

Step 1

Remove tomato tops and hollow out each tomato, saving the insides.
Finely dice the centers along with the green and red bell peppers and onion

Heat olive oil in a skillet, then add the peppers and onion mixture.
Cook until onions become clear.
Add Old Bay, salt, bread crumbs and crab meat.
Mix all ingredients together, remove from heat, and stuff the tomatoes.
Fill each tomato with a layer of the crabmeat mixture, parmesan cheese and bread crumbs.
Repeat until the tomatoes are full.
Top with more cheese and bread crumbs
Bake or grill in a baking dish at 350 degrees for 20 minutes.
Serve hot.
