- 1 1/2 cups coconut macaroon cookie crumbs
- 2 Tbsp. butter, melted
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 1/2 cup cream of coconut
- 1/2 tbsp. vanilla
- 2 eggs

Step 1
preheat oven to 350. Mix crumbs and butter. Press firmly onto bottom of greased 8 inch sq baking pan; set aside. Beat cream cheese, sugar, cream of coconut and vanilla in a large bowl with electric mixer on medium speed until well blended. Add eggs; beat just until blended.
Pour over crust.
Bake 20 to 25 min, or until center is almost set. Cool. Refrigerate 3 hrs or overnight. Cut into 16 bars and serve.
