Sauteed String Beans

Ingredients

  • 1 lb fresh string beans
  • 3 garlic cloves, sliced thin
  • 3 T olive oil
  • 1/2 C chicken stock
  • 1/8 tsp red pepper flakes
  • 1/4 tsp sugar
  • 1 tsp hot pepper oil
  • 1 T soy sauce
  • 1 T Oriental sesame oil
  • 2 T finely chopped scallions
  • 1 1/2 tsp cornstarch
  • 1 T water

Preparation

Step 1

In a large pot of boiling water, blanch the string beans until bright green, 2 to 3 minutes. Drain well.

In a heavy skillet, saute the beans and garlic in the olive oil for 2 minutes. Add the remaining ingredients, except for the cornstarch and water, and cook 4 minteus longer.

Mix the starch and water. Add to beans, tossing to thicken and serve immediately.
