Roasted Carrots And Bacon

In this simple side dish, salty bacon complements roasted carrots, whose sweet side is enhanced by a bit of maple syrup. They're delicious with salmon or roast chicken.

Ingredients
- 1-1/2 lb. carrots, cut into 1-inch pieces
- 3 slices bacon cut into 1/2-inch pieces
- 1 Tbs. maple syrup
- 1 Tbs. chopped fresh parsley
- Kosher salt and freshly ground black pepper
Preparation
Step 1
Heat the oven to 400 degrees. toss the carrots and bacon together on a large rimmed baking sheet. Roast in the oven u til the carrots are tender, about 30 minutes. Toss the carrots with the maple syrup and parsley. Season with salt and pepper
