Ingredients

  • 2 boneless, skinless chicken breasts, cut into 1" bites (or leave split)
  • 1 cup white, unseasoned bread crumbs
  • 3/4 cup finely grated Parmesan cheese
  • 2 tablespoons freshly minced parsley
  • 2 eggs, beaten
  • 5 tablespoons butter
  • Salt and freshly-ground black pepper
  • Toothpicks

Step 1

In a large, shallow bowl, mix together the bread crumbs, Parmesan
cheese, parsley and salt and pepper. In a second smaller bowl, place the
eggs. Dip the chicken pieces in the beaten egg, then into the bread
crumb mixture. Chill in the fridge for about an hour.

Heat the butter over medium heat in a skillet, and when melted, add the
chicken pieces. Turn them frequently to cook on all sides and not burn
the cheese. Cook until thoroughly cooked through. Serve as an appetizer
with toothpicks.
