Ingredients

  • STOCK:
  • I leftover ham bone
  • 3 carrots roughly chopped
  • 3 celery ribs roughly chopped
  • 1 large yellow onion roughly chopped
  • 1 packet of herbs (bouquet garni) thyme, parsley, bay leaf. black peppercorns
  • SOUP:
  • 1 pkg. Lentils rinsed and sorted
  • 2 c carrots small diced
  • 2 c celery ribs small diced
  • 1/2 large onion small diced
  • 2 c potatoes small diced
  • 2 c ham small diced
  • 1 c bacon small diced
  • 2-3 bay leaves
  • salt and pepper to taste

Preparation

Step 1

.Make stock
. saute bacon and ham with seasonings, add vegetables and cook together for a couple of minutes.
. add stock and reduce heat to a simmer, cook for one hour
