Pastry Olive Bundles

To ensure that the pastry wrapping was not saturated with oil from the olives. Pat the olives completely dry with a paper towel or clean kitchen towel so that there was no liquid in them to seep through.

Ingredients
- 1 1/2 cups grated Gouda cheese
- 3/4 cup all-purpose flour
- 4 tablespoons butter, softened
- 3 slices bacon, crisp-cooked, crumbled
- 1/8 teaspoon black pepper
- 21 large pimiento-stuffed green Spanish olives
Preparation
Step 1
1 Preheat the oven to 375ºF. Spray a baking sheet with nonstick cooking spray or line with parchment paper.
2 Combine Gouda, flour, butter, bacon and black pepper in a medium bowl and mix well, adding a small amount of water to dough if crumbly.
3 Wrap 1 heaping teaspoonful of dough around each olive. Arrange olives on prepared baking sheet.
4 Bake until lightly browned, about 20 to 25 minutes. Serve immediately or cool to room temperature.
