Red Snapper With Citrus Salsa

Ingredients
- For the salsa:
- 1 ruby red grapefruit
- 2 navel oranges
- 1 tablespoon extra virgin olive oil
- 1 tablespoon honey
- salt and pepper, to taste
- 2 tablespoons slivered,
- fresh basil leaves
- 6 red snapper fillets, about 6 ounces each
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- Salt and freshly ground black pepper, to taste
- 6 full sprigs of basil, for garnish

Preparation
Step 1
1. Prepare the salsa: Section the grapefruit and oranges over a bowl to catch the juices. Fold in the remaining salsa ingredients.
2. Place the fish, flesh-side up, in a lightly oiled broiler pan. Brush the fillets with the olive oil and drizzle with the lime juice. Season with salt and pepper. Broil until the fish is cooked through and flakes easily when tested with a fork, about 7 to 8 minutes.
3. Place a fillet in the center of each of 6 dinner plates; divide the salsa evenly atop. Garnish each with a basil sprig. Serve immediately.
